Shredded Pork, Beijing Style at China Blue in NYC. I absolutely loved this dish, as it takes a simple traditional "moo shu" concept with meat wrapped inside tortilla pancakes ams improves it tenfold. The beef was tender and seasoned with a sweet yet spicy hoisin-type seasoning that wasn't overwhelming at all. The tortilla wraps were nice and hot and kept warm in the dim sum steam container. The wraps themselves were the perfect thickness - not too thin which would allow meat to escape and not too thick which would drown out the flavors of the beef itself. Terrific service and ambiance. When in NYC, I usually eat Chinese food in Chinatown, but this place trumps any place in Chinatown and will definitely be part of my regular rotation any time I'm in NYC!
