Quintonil is one of the top 30 restaurants in the world according to the influential San Pellegrino list. The chef-owner is Jorge Vallejo. The food is elevated Mexican cuisine and even by looking at the dish one can see that. It's sea bass with "chile guajillo" purée, ayocote beans and "chile guero." Pujol's Chef Olvera has led the resurgence of Mexican food as sophisticated fare but still respecting the ingredients and culture of Mexico. But it is the young chefs like Jorge who will push this cuisine forward to the next level.
