One of the most iconic restaurants in the world is Pascal Barbot's 3 Michelin starred L'Astrance. This dish of young hen with apricot, chanterelle mushrooms and hazelnuts was one of my favorites of the meal. The surprising aspect of my meal and even this dish is that it feels very un-French. Pascal emphasizes simplicity, execution and super high-quality ingredients. That hen was so moist and flavorful. I had never eaten hen of that quality before and it was awe-inspiring. It was a very special experience eating at L'Astrance.
