Oh carrot cake - my favorite dessert. This one might possibly be at the top end of carrot cakes I’ve tried, and trust me I’ve had my fair share of cc slices. I discovered this gem at a neighborhood grocery store. They get them imported from a company in NY. That’s all the intel I am able to collect, but I’m totally okay with that because they actually discontinued ordering them for half a year (it was a long wait) and now they’re fully back in play. With the number of customer complaints they received (including several of mine) they decided to give the people what they’ve been asking for. Life lesson out of this - 3 P’s: patience, perseverance, and persistency. Unsure on the thought process to suspend this delicious dessert, but the people spoke and they listened. I just love how soft the cake is, even after being refrigerated. Lot of carrot cakes that have been refrigerated become dry and hard. Not the case with this triple layered bad boy. The icing is smooth and creamy and reminds me of Cinnabon cinnamon roll icing. Love that. Crushed walnuts, raisins, and shredded carrots, got to have it. At the very top, above it all sits a super rich & sweet glop of icing that’s a more traditional type you’ll find on cakes. It’s different from the smooth Cinnabon like icing, and slightly dangerous (so sweet it’s pretty tough to eat just by itself without some breading). I appreciate how the bakers chose to ratio that out. Too much of that icing would send someone to the ER. The icing on the cake here, quite frankly isn’t the icing, but the fact that I got this supreme carrot cake bar for free. Yes, FREE. The staff member behind the bakery counter who retrieved the carrot cake for me was obnoxiously rude and a store manager caught site of it and apologized, putting the carrot cake on the house. One woman’s bad day = another man’s big time bite.
