03/13/19 Gu’s Kitchen recently opened up on the Buford Hwy corridor just north of Atlanta, GA. Their food stall in Krog Street Market in Atlanta served similar dishes but the new restaurant has expanded the menu and added more robust dishes. My go to here is still their Pork Dumplings in Zhong style sauce. The dumplings are perfectly steamed and what makes them so great is the not too thin, not too thick dumpling skin. The skin is the right texture and doesn’t cover up the meat and fillings inside. The pork is tasty with sweet notes and subtle fatness. Greens onions are added to the pork mix to provide contrast and aroma. But let me tell you about the Zhong sauce.... The dumpling skin again is the right texture for allowing the fillings to come through and this is important because the Zhong sauce brings it all together in one harmonies note. The sauce is an unbeatable, award winning sweet and spicy. It coats and is soaked up by the chewy, sticky dumpling skin giving each bite a rush of pork fat, with that instant sweet followed by the heat. And before you know it, your head is getting sweaty, but you can’t resist to reach for another. Not going to lie, I bought a bottle of their sauce for $10 after my meal so I can try to replicate this feeling again at home.
