03/28/18 The Salumi appetizer at Kindred in Davidson, NC is one of the best cured meat platters I’ve had and very much worth this report. First off, the mustard seed smear on the side is a great spicy, clear your sinuses offering that stays true to the original grains and pungency of the seeds. The vannoy country ham, vino rosso, country pate were well executed cured meats. The star of the trio was the rosso, which presented a great complex tasting of fatty and salty cured meat with simple black pepper seasoning. The fatty meat melts in your mouth and makes you sink back into your seat with a sense of extreme gratification. The salted country ham and pate were also very delicious as they provide textural variation to the fatty rosso. The pate paired with toasted bread points were creamy with a sweet and crunchy offering. The country ham was thinly sliced and had plentiful flavors of peppercorn and fermented, air dried meat that still had a fatty ring and tongue feel. Overall, this dish set up the perfect line up for what was expected at this creative, inviting restaurant.
